Onion Rings Deserve a Great Dip

We love visiting with our friends and hanging out on Sundays for the big games. This is one of the fastest and tastiest recipes that we make all the time.

To make the Onion Rings you only need 4 items. Flour, Beer (we think a stout beer like Guinness works well), Yellow Onions and Oil.

  • 2 cups of flour
  • 1 Pint of Beer
  • 4 Onions Peeled and Thick Sliced
  • Enough Cooking Oil to Fry the Onions

COOKING

  1. Put about 6 inches of oil in a medium sized pot and heat over medium high heat until the temperature reaches 350F
  2. Put the flour in a bowl and whisk in enough Beer to make a mixture like a thick pancake batter.
  3. When the oil has reached 350F, work in batches and dip the onion rings into the batter, and then into the oil. Fry, flipping them once or twice, for about 2 minutes, or until golden and crispy. Drain on paper towels. You can keep the rings warm in a low oven if you like, while you finish the rest.

The spicy curried mayo dip is not just a suggestion, it is a necessity. We have blended in plenty of curry powder, turmeric, and fiery cayenne for a powerful flavor that stands up to the onion rings. The flavor and color develop over time as the dip sits, so plan to make it a little bit ahead of time to let the grains of spice incorporate into the mayonnaise for about 30 minutes before using. You might want to save this recipe for other uses because this Dip is also great on a roast beef or corned beef sandwich.

SAUCE

  • 1/2 cup mayonnaise
  • 1 tsp curry powder
  • 1/2 tsp cayenne powder
  • 1/2 tsp turmeric
  • salt and pepper to taste

 Mix sauce ingredients together well and place them covered in the refrigerator for about an hour. Again, make this ahead of time so it is ready by the time the onion rings are finished cooling.
